Waffle in a Blender
This is a great recipe for a healthy and energetic breakfast!


  • Ingredients

    • 1 egg (if allergic or sensitive to chicken eggs you can substitute with duck, turkey, quail eggs, Ener-G egg replacer or flax egg)
    • 1 cup millet or quinoa* (soaked overnight)
    • ¼ cup dairy free milk of your choice
    • 1 tbs coconut oil
    • 1 tsp vanilla and/or cinnamon
    • ½ tsp baking powder
    • ½ tsp baking soda
    • 1/8 tsp Himalaya or Celtic salt
    • 1 or 1½ tbs coconut sugar
    • 1 tbs Hemp seeds
    • ¼ cup spinach or kale (optional)/li>

  • Serves 2+

  • Directions:

    1. Blend all ingredients together until an even consistency or about 40-60 seconds with your Vitamix blender
    2. Pour into the waffle maker
    3. Serve with fresh fruit of your choice and organic grade B maple syrup. (If you would like, you can top it with homemade coconut whipped cream)
    4. *With quinoa the texture is a little different, but pleasant and a little creamier in the center.
      I will experiment with buckwheat and sorghum. I tried amaranth, but they were too wet and I don’t recommend it.
