Kale & Cashews Under Palm Salad
With Autumn vegetables coming into season and a nice chill in the air; we have a delicious, healthy and filling recipe for you! It’s easy to make.

  • Ingredients

    • Butternut Squash
    • Red Pepper
    • Avocado
    • Pinch of Nutmeg or Cinnamon
    • Brown Sugar
    • Himalayan Sea Salt
    • Shaved Kale
    • Brussels Sprouts
    • Apple
    • Walnuts
    • Olive Oil
    • Lemon
    • Raw Honey

  • Procedure:

    1. Roast butternut squash and red peppers under avocado slices for 20 minutes at 400 degrees on lower shelf. Before roasting, sprinkle with nutmeg or cinnamon, brown sugar and himalayan sea salt.
    2. Add roasted vegetables to a bowl of shaved kale, thinly sliced brussels sprouts(I used a mandalin slicer), apples, walnuts, olive oil, lemon and raw honey.
    3. Toss and serve.
