Avocado Kale Chili Salad

A truly delicious chili-spiced kale salad with a tangy creamy avocado mustard dressing. This recipe is hearty and filling yet easy on the digestion. Serve 4 as a side salad or 2 as a main dish. Scroll down for some of the amazing benefits of including more kale in your diet!

  • Ingredients

    • 1 bunch kale stems removed
    • (You don’t need to do it in case ,you are using baby kale)
    • 1 1/2 avocados chopped
    • 1/2 red onion small thinly sliced
    • 1/2 persian cucumber thinly sliced
    • red chilli sliced to taste
    • coriander to taste

  • Ingredients For Dressing

    • 1 avocado
    • 6 teaspoons lemon juice
    • 6 teaspoons lime juice
    • 1/4 teaspoon mustard powder
    • Pinch of cayenne pepper
    • coriander to taste
    • salt and pepper to taste
    • Garnish with:
      flaked almondsred chili sliced(optional)
      salt and pepper to taste.

  • Procedure:

    1. Kale wash and chop coarsely, place into mixing bowl
    2. Toss salt and pepper through kale and let sit for about 10 minutes
    3. Add chopped avocado, red onion, cucumber, red chilies, and cilantro, toss gently through salad
    4. Place all dressing ingredients (see above)into blender, blend on high speed for about 1 minute, Toss dressing through salad.
